Do you need an extra t-shirt but you don’t want to spend in it too much?
Or you want to try fresh vegetables from a local producer?
Those markets are the perfect place to find this kind of things and sometimes you have the chance to have a chat and improve your Spanish. Although you’ll find out not everybody is Spanish or Catalan in some of them.
Avoid the ones on the coast in summer or the ones that are open on Sundays if you don’t like crowded places.
Some of these markets have their origin in the 13th C. like the one in La Bisbal d’Empordà and they are open normally from 8pm until 2pm.

Thanks for the list, it is very helpful. I was looking for some stuff and it was great to see so many things together in the same place. Ian
